Demanding and idiosyncratic, Aimé Salon shaped the Champagne of his dreams: a blanc de blancs without equal. Originally made for his own enjoyment, it was not released to the public until the 1920s.
This Champagne comes from a one-hectare plot called the "Jardin de Salon" and from nineteen other small plots in Le Mesnil-sur-Oger, selected by Aimé Salon in the early 20th century. The wine's remarkable complexity and finesse are acquired over at least ten years of ageing in the Salon cellars.
