The estate's greatest asset is the vineyard
The winery belongs to the Ribera del Duero Denomination of Origin and is registered with the Castilla y León Organic Farming Council.
It has 30 hectares of very old vines, most of them farmed organically, plus 5 hectares of relatively young vines (under 50 years old). For more than 10 vintages it has supplied grapes to some of the region's leading wineries.
Their passion is the vineyard! Jorge comes from a family with several generations of growers, and studied soil, viticulture and oenology at the universities of Bordeaux and Burgundy. He worked at prestigious wineries such as Domaine de la Romanée-Conti for more than two years. In Spain he also spent a year with the Vega Sicilia group and nine seasons as technical director of Bodegas Arzuaga-Navarro. Since 2013 he has worked full time at Dominio del Águila.
Throughout those years of learning and gaining experience, they also worked to recover the family vineyards, building up a significant holding of very high-quality vines, true Grands Crus… where Tempranillo is the star, living happily alongside other varieties such as Blanca del País, Bobal, Garnacha, Albillo and Tempranillo Gris.
They have also gradually restored a traditional 17th-century wine press and six 15th-century underground cellars, now linked together, which house concrete tanks and oak casks.
A symbiosis of tradition and knowledge
From viticulture to winemaking, Dominio del Águila strives to do everything by hand, with great respect for nature, combining tradition and knowledge: from using herbal infusions such as valerian and yarrow to treat the vines, to neither fining nor filtering the wine.
With these principles, Dominio del Águila's ultimate goal is to make pure, fine wines: organic wines able to age for a very long time, yet enjoyable at any moment.
All of them are made without destemming and are foot-trodden in the press as in the old days. Malolactic fermentation takes place in top-quality oak casks, and ageing in the underground galleries. There are currently around 250 oak casks.
