Gravity-fed winemaking
The 27-metre-high winemaking hall is designed to use gravity to move grapes, must and wine, avoiding the traditional use of pumps.
For winemaking there are French oak vats and concrete and stainless steel tanks of different sizes, so that each plot can be vinified separately, making the most of each terroir's potential.
For grape selection, optical sorting equipment chooses, berry by berry, only those that meet optimum quality standards.
Harvesting by moonlight
The vines are harvested by moonlight, when temperatures are low, so the fruit is picked with its properties intact.
The grapes are taken to the winery in hermetically sealed insulated trailers, keeping out road dust and insects, and covered with a layer of dry ice to prevent fermentation from starting.
High technology and innovation set Bodega SOMMOS apart, with one aim: to care for the raw material. It stands out for its constant innovation, having developed a vertical pneumatic press and a Cartesian robot for the egg-shaped vats (ovis).
