Wines that time continues to enhance
Always driven by a pioneering spirit, La Chablisienne has never stopped taking on challenges in fields as varied as viticulture, oenology, human resources and sales. It is everyone's meticulous work that produces wines that time continues to enhance.
Chablis is one of France's oldest vineyard regions. Over time, its Chardonnay-based white wines have earned an extraordinary reputation worldwide. Spread along both banks of the Serein River, the appellation's vines extend across 17 villages.
An exceptional soil
The wines owe their unique character to the soil, essentially Kimmeridgian, where sediments rich in tiny fossilised oysters of the species Ostrea virgula were laid down.
This exceptional soil, found in only a handful of places in the world, gives the terroir its incomparable minerality, finesse and crystalline quality.
Winemaking is the essential step in expressing the full richness and complexity of the Chablis terroirs. After harvest, the member growers carry out the first pressing as close to the vines as possible to ensure the highest-quality must. La Chablisienne then takes over for settling and for alcoholic and malolactic fermentation. To preserve and reveal every nuance and the depth of Chablis wines, it uses the best equipment. Fermentation and ageing take place in temperature-controlled stainless steel tanks or, for vintage selections, in 228-litre oak barrels.
